Where'd we come from?

Alchemy is - according to ye olde Google search - "a seemingly magical process of transformation, creation, or combination."

 

Red Head Rub & All-Purpose Seasoning was created out of love for the alchemy that the world of American BBQ has to offer. While heat, smoke and mean are the traditional elements, seasoning takes on endless (and endlessly debated) forms. We were obsessed with chasing perfect flavor and ultimately developed not only a magical BBQ rub, but the most amazxing all-purpose seasoning you are likely to encounter. Soooo what next? From land to sea.

 

We wanted to pay homage to one of the world's great cuisines, that of our beloved South Carolina Lowcountry and adjacent Sea Islands. It would be hard to overestimate the region's status in American culinary history; a history never venturing far from the amazing seafood her waters have to offer. Approaching this passion with every bit of the diligence we poured into our preceding eneavors, we feel we have created blends that take their places as worthy components of our region's legendary cuisine. Read on to learn more about how and why each of our Davy Jones blends was developed!

 

Oh, and how did we decide on the name? Yeah, well...just seemed to make sense.

Original Seafood Seasoning

Sure, seasonings flavor things. They can make or break a dish on par with technique or ingredient quality. Being aware of this, we feel you can't take chances with superior seafood. It must be the star of the table and it must be treated with the utmost respect. That's what made creating a seafood seasoning very challenging. How to blend ingredients into something that spotlights the star of the table while in not way detracting from, or overpowering, its natural greatness? Research, tradition, testing, trial & error...you get the picture. But after all is said and done, the secret is balance. As fate would have it, the results of our endeavors include an incredibly delicate balance of sweet, salty, bitter, sour, umami and just a tingle of spice. When such a balance is achieved, the innate beauty of fresh seafood shines like the sun!

Lowcountry Boil Seasoning

"The secret to the greatest gatherings."

We've dug deeply into our regional culinary history for the flavors blended in Davy Jones Shrimp, Crab & Lowcountry Boil Seasoning. We've included fragrant bay, warm allspice, sharp ground mustard seed and pungent black pepper, among many others.

 

Like any good legend, the history of Lowcountry Boil is aswim in a sea of confusion and conflicting facts. We've researched, we've seen convincing perspectives, and we fiture the truth is out there somewhere. Some of you may know the absolute truth, and we would love for you to share! Anyhow, if you are going to market a blend dedicated to this growing legend, you have pressing concerns, beginning with: What's it REALLY called? Even if it has become known far and wide as Lowcountry Boil (Low Country? Low-Country?), some swear by Frogmore Stew, Beaufort Stew and a handful of other names that no doubt reference origin stories. Still, if you mention Lowcountry Boil, folks generally seem to know what you mean, so it just made a bit of sense to run with it.

 

Now that the name's settled - sort of - what's in it? Easy: shrimp, corn, potatoes, sausage and seasoning. But what about crab? What kind of sausage? New potatoes? Lemons? Onions? Well, we're going to defer to whatever folks swear by. There's plenty of room for puritsts and adventurists alike. But friends, here's where we would really like to see a bit of consistency: We would LOVE for Davy Jones Shrimp, Crab & Lowcountry Boil Seasoning to be your go-to, always-on-hand seasoing for Lowcountry Boils, Shrimp Boils and Crab Boils too. If it hasn't yet become your favorite seafood boil seasoning, perhaps it's only because you haven't tried it! So no matter where you are, when the Davy Jones starts boiling and the aroma starts drifting, close your eyes, breathe deeply, and you're on a grey weathered deck on the Carolina coast.
